Kalyana Manga Urugai


                   Kalyana manga urugai is a very easy and simple pickle to prepare instantly.This type of urugai is served in almost all the South Indian marriages.The correct mixture of spices makes the mango to stay good for longer period. Kalyana manga urugai goes well with curd rice.Now lets check out the recipe.  

Ingredients :

Raw mango - 2
Red chilli powder - 1 tblsp
Salt - to taste
Hing - 1/2 tsp
Mustard seeds - 1/2 tsp
Fenugreek seeds - 1/2 tsp
Coconut oil - 2 tblsp
Curry leaves - 1 spring


Method :
  • Chop the raw mangoes into very small pieces and transfer it to a mixing bowl.
  • Add chilli powder, salt and hing to the mangoes mix well and set aside.
  • Heat coconut oil in a pan for seasoning.
  • Add fenugreek seeds and mustard seeds followed by curry leaves.
  • Pour the oil into chopped mango and mix well.
  • Allow it to set for an hour so that the spices get soaked well with the mango.
  • Now the kalyana manga urugai is ready to be served.

Chop raw mangoes into small pieces

Add seasoning mustard seeds,fenugreek seeds and curry leaves


Pour it into mango


Mix well

Easy Custard Pudding


                       Custard pudding is a very easy recipe which is prepared using custard powder mix.The texture and taste has been turn out to be best by just using three ingredients custard powder, milk and sugar.You can make more yummy by adding dry fruits as well.Now lets check out the recipe by step by step pictures.

Ingredients:

Milk - 2 cups
Vanilla Custard Powder - 2 tblsp
Sugar - 3 tblsp


Method :

  • Take a mixing bowl and add vanilla custard powder.
  • Add 1/2 cup of milk and make it into a smooth paste and set aside.
  • Make sure that the milk is cold while mixing and also it should not form any lumps.
  • Now take a sauce pan and add the remaining milk by adding sugar.
  • Boil the milk until sugar dissolves into the milk.
  • Once it is done,take off the sauce pan from heat and add the custard mix paste into it.
  • While adding the custard mix paste, keep stirring the milk or it will form lumps.
  • After mixing it,put the sauce pan again on flame and cook for one minute.
  • Stir continuously and you can see the mixture gets thicken with in a few seconds.
  • At this point, switch off the flame and transfer the mixture into molds.
  • Allow it to cool down completely till room temperature and then refrigerate for 2 hours.
  • For serving it unmold the mixture into a plate.
  • You can garnish with dry fruits or cherries and Serve.

Take custard powder in a bowl


Add half cup of milk


Make it into smooth paste without lumps


Heat milk in a sauce pan


Add sugar


Mix well


Bring it to boil


Take off from heat


Add custard powder mix


Mix well while adding 


Put it again on heat


Cook till it thickens


Transfer it to a mold


Bring to room temperature and refrigerate


Take off from fridge after 2 hours


Unmold it


Done

Leftover Chapathi Upma


                      Chapathi upma is a very simplest recipe which is made out off leftover chapathi. When you are bored of as-usual rava upma, you can try out this recipe which is also delicious and healthy.I have made it simple upma but you can add more vegetables to make the chapathi upma taste yummy.As a healthy snack you can make these chapathi upma as a evening snacks for kids.Now lets check out the recipe.

Ingredients :

Leftover Chapathi - 5
Onion - 1 chopped
Hing - a pinch
Red chilli powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Garam masala - 1/2 tsp
Salt - to taste
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Curry leaves - 1 spring
Coriander leaves - as required
Water - 2 tblsp
Lemon juice - 2 tblsp
Coconut oil - 2 tblsp


Method :

  • Firstly, take the leftover chapathi and tear them into pieces and blend it to coarse.
  • Heat oil in a pan and add mustard seeds and cumin seeds followed by curry leaves & coriander leaves.
  • Add hing and chopped onions and saute it for few minutes.
  • Add salt to taste so that onions turns soft quickly.
  • Now add the spices, turmeric powder,chilli powder and garam masala and stir it for few minutes.
  • Add the chapathi and mix it well so that it coats well.
  • By adding little water cover and cook on low flame.
  • Once they are cooked open the lid and add lemon juice and stir well.
  • Finally, garnish with coriander leaves.
  • Serve hot.
