Kalyana manga urugai is a very easy and simple pickle to prepare instantly.This type of urugai is served in almost all the South Indian marriages.The correct mixture of spices makes the mango to stay good for longer period. Ingredients :
Raw mango - 2
Red chilli powder - 1 tblsp
Salt - to taste
Hing - 1/2 tsp
Mustard seeds - 1/2 tsp
Fenugreek seeds - 1/2 tsp
Coconut oil - 2 tblsp
Curry leaves - 1 spring
Method :
- Chop the raw mangoes into very small pieces and transfer it to a mixing bowl.
- Add chilli powder, salt and hing to the mangoes mix well and set aside.
- Heat coconut oil in a pan for seasoning.
- Add fenugreek seeds and mustard seeds followed by curry leaves.
- Pour the oil into chopped mango and mix well.
- Allow it to set for an hour so that the spices get soaked well with the mango.
- Now the kalyana manga urugai is ready to be served.
