Kalyana Manga Urugai


                   Kalyana manga urugai is a very easy and simple pickle to prepare instantly.This type of urugai is served in almost all the South Indian marriages.The correct mixture of spices makes the mango to stay good for longer period. Kalyana manga urugai goes well with curd rice.Now lets check out the recipe.  

Ingredients :

Raw mango - 2
Red chilli powder - 1 tblsp
Salt - to taste
Hing - 1/2 tsp
Mustard seeds - 1/2 tsp
Fenugreek seeds - 1/2 tsp
Coconut oil - 2 tblsp
Curry leaves - 1 spring


Method :
  • Chop the raw mangoes into very small pieces and transfer it to a mixing bowl.
  • Add chilli powder, salt and hing to the mangoes mix well and set aside.
  • Heat coconut oil in a pan for seasoning.
  • Add fenugreek seeds and mustard seeds followed by curry leaves.
  • Pour the oil into chopped mango and mix well.
  • Allow it to set for an hour so that the spices get soaked well with the mango.
  • Now the kalyana manga urugai is ready to be served.

Add seasoning mustard seeds,fenugreek seeds and curry leaves


Pour it into mango


Mix well

Simple Potato Fry/Potato Poriyal


                         Potato is a very common vegetable which is liked by all people.Potato fry is a very simple recipe to be prepared with basic ingredients.It can be served with steamed rice, rasam itself.Now lets check out the recipe.

Ingredients :

Potatoes - 3 large chopped
Turmeric powder - 1/2 tsp
Chilli powder - 1 tblsp
Salt - to taste
Hing - 1/2 tsp
Dry Red Chilli - 2
Mustard seeds - 1 tsp
Urad dal/Ulundhu paruppu - 1/2 tsp
Curry leaves -  spring
Coconut Oil - 3 tblsp

Method :

  • Firstly, take 3 large potatoes and peel them.Chop into medium size pieces and set aside.
  • Heat oil in a pan and add urad dal,mustard seeds,dry red chillies and curry leaves.
  • Saute it and then add the chopped potatoes.
  • Toss well in the oil for about 1 min.
  • Add turmeric powder and salt to taste.Mix them well.
  • Add red chilli powder and stir it for a while.
  • Mix well and cover & cook on low flame.
  • Now open the lid and cook it on medium flame till the potatoes are roasted well.
  • Keep on stirring in-between.
  • Serve hot with rice.

Simple & Tasty Chicken Gravy


This chicken gravy is very easy to cook and prepared with basic ingredients and also tastes so good.In this recipe you no need to add coconut or coconut milk and no grinding is involved.This is best to be served with rice and chapathi.

Ingredients :

Chicken - 3/4kg
Cinnamon - 1
Cloves - 4
Cardamom - 4
Onions - 3 chopped
Tomatoes - 2 chopped
Green Chillies - 3
Ginger garlic paste - 1 tblsp
Red chilli powder - 2 tblsp
Turmeric powder - 1/2 tsp
Coriander powder - 2 tblsp
Garam Masala - 1 tsp
Cumin powder - 1 tsp
Salt - as required
Water - as required
Methi leaves/Coriander leaves - for garnish
Coconut oil - 3 tblsp


Method :

  • Firstly, take the chicken pieces in a bowl and add turmeric powder a pinch and keep it aside.
  • Heat oil in a pan and add whole spices cinnamon, cloves and cardamom.
  • Now add in the chopped onions and green chillies and saute it till it is transparent.
  • Add a little salt, so that the onions easily turns golden brown.
  • Then add ginger garlic paste and saute it till the raw smell goes off.
  • Now add the spice powders like red chilli powder, turmeric powder, garam masala, coriander powder and fry for few minutes.
  • After few minutes, add the chopped tomatoes and if required add a little water and cover & cook on medium flame.
  • Now add the chicken pieces and mix it well with the masala. 
  • Also, add required water and salt as per taste and cook covered the chicken for atleast 20 minutes.
  • Once it is done, garnish the gravy with methi leaves or fresh coriander leaves.
  • Serve hot with steamed rice.

Sardine Fish Fry/Chaala Meen Fry

       

                   Sardine fish fry is the most simplest recipe to prepare and it is a traditional recipe in kerala. This type of fish is rich in minerals and vitamins. Sardine has very small bones and they are good in calcium. It is very easy to prepare and tasty & healthy too. Now lets check out the recipe.

Ingredients :

Sardine Fish/Chaala Meen - 15 nos
Red Chilli powder - 1 tblsp
Pepper powder - 1/2 tblsp
Coriander powder - 1/2 tblsp
Cornflour - 1/2 tblsp
Salt -to taste
Turmeric powder - 1/2 tsp
Oil - for frying

Method :

  • First take your cleaned sardine fish/chaala meen for marinating. 
  • Marinate the fish with all spices, red chilli powder, turmeric powder, cornflour, salt, pepper powder and coriander powder.
  • You can make a fine paste of these ingredients by using water and then apply the paste on the fish otherwise directly add it and mix it well. 
  • Let the marinated fish pieces rest for atleast 15 mins.
  • Now heat a frying pan and pour required oil for frying.
  • When the oil gets heated start frying the fish on medium low heat.
  • Flip over the fish pieces and cook it for another 6 minutes.
  • Switch off the flame and serve hot with rice.

Valakkai Puttu Recipe


                              Valakkai puttu is a very simple dish, which is prepared with raw banana. Though it looks simple, it tastes very delicious as a side dish for rasam and paruppu sadham. Here first I steam the valakkai and then season it & serve.

Ingredients :

Raw Banana/Valakkai - 2
Dry red chilli - 2
Mustard seeds - 1 tblsp
Curry leaves - 1 spring
Urad dal - 1 tblsp
Coconut - 1/2 cup
Coconut oil - 2 tblsp

Method :

  • Wash the raw banana and cut it into 2 pieces. 
  • Add it to the boiling water and keep the flame low and cook it for 10 minutes.
  • The skin colour of banana gets changed when it is done. 
  • Remove from water and allow it to coal down. 
  • Peel off the skin and grate it. 
  • Now heat oil in a kadai, add mustard seeds, urad dal, curry leaves, red chillies and saute for a few minutes. 
  • Add the grated bananas with salt and mix well. 
  • Cook on low heat for 2 minutes and then add the fresh coconut and mix well. 
  • Serve with rasam and paruppu sadham.
