Leftover Chapathi Upma


                      Chapathi upma is a very simplest recipe which is made out off leftover chapathi. When you are bored of as-usual rava upma, you can try out this recipe which is also delicious and healthy.I have made it simple upma but you can add more vegetables to make the chapathi upma taste yummy.As a healthy snack you can make these chapathi upma as a evening snacks for kids.Now lets check out the recipe.

Ingredients :

Leftover Chapathi - 5
Onion - 1 chopped
Hing - a pinch
Red chilli powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Garam masala - 1/2 tsp
Salt - to taste
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Curry leaves - 1 spring
Coriander leaves - as required
Water - 2 tblsp
Lemon juice - 2 tblsp
Coconut oil - 2 tblsp


Method :

  • Firstly, take the leftover chapathi and tear them into pieces and blend it to coarse.
  • Heat oil in a pan and add mustard seeds and cumin seeds followed by curry leaves & coriander leaves.
  • Add hing and chopped onions and saute it for few minutes.
  • Add salt to taste so that onions turns soft quickly.
  • Now add the spices, turmeric powder,chilli powder and garam masala and stir it for few minutes.
  • Add the chapathi and mix it well so that it coats well.
  • By adding little water cover and cook on low flame.
  • Once they are cooked open the lid and add lemon juice and stir well.
  • Finally, garnish with coriander leaves.
  • Serve hot.

Take leftover chapathi


Tear them all


Blend them 


Heat oil in a pan


Add mustard seeds and cumin seeds


Add curry leaves and coriander leaves


Add hing a pinch


Add chopped onions


Add salt to taste


Saute till onions turn soft


Add spices


Stir them


Add chapathi


Mix well


Add little water and mix it


Cover & cook


Add lemon juice


Mix well


Garnish with coriander leaves


Serve

Egg Kothu Parotta

                 
                           Kothu Parotta is a famous street food in South India. It is prepared with leftover parotta and which is combined with mixed vegetables or with eggs or with chicken. Whatever it is kothu parotta has a unique mouthwatering taste always. Lets check out the recipe now.

Ingredients :
Parotta - 3 small sized
Eggs - 2
Onion - 1 large chopped
Tomato - 1 large chopped
Green chilli - 3 chopped
Red chilli powder - 1 tsp
Coriander powder - 1 tsp
Garam Masala - 1/2 tsp
Turmeric powder - 1/2 tsp
Pepper powder - 1/2 tsp
Ginger garlic paste - 1 tblsp
Curry leaves/Pudhina leaves/Coriander leaves - handful
Salt - to taste
Oil - 3 tblsp

Method :

  • Heat a pan with oil, add chopped onions and green chillies and saute it till it becomes transparent.
  • Then add the ginger garlic paste and saute it till the raw smell goes off.
  • Add curry leaves, coriander leaves and pudhina and stir for a while.
  • Now add the chopped tomatoes and give a good mix.
  • Add all the spices, turmeric powder, chilli powder, coriander powder,garam masala, salt and mix well.
  • Pour the eggs and scramble it till almost cooked.
  • Once it is coated well with the masala, add the parotta pieces and give a good mix.
  • Make sure that the parottas are not sticky to one another. 
  • Switch off the flame and garnish with coriander leaves. 
  • Serve.
