Kothu Parotta is a famous street food in South India. It is prepared with leftover parotta and which is combined with mixed vegetables or with eggs or with chicken. Whatever it is kothu parotta has a unique mouthwatering taste always. Lets check out the recipe now.
Ingredients :
Parotta - 3 small sized
Eggs - 2
Onion - 1 large chopped
Tomato - 1 large chopped
Green chilli - 3 chopped
Red chilli powder - 1 tsp
Coriander powder - 1 tsp
Garam Masala - 1/2 tsp
Turmeric powder - 1/2 tsp
Pepper powder - 1/2 tsp
Ginger garlic paste - 1 tblsp
Curry leaves/Pudhina leaves/Coriander leaves - handful
Salt - to taste
Oil - 3 tblsp
Method :
- Heat a pan with oil, add chopped onions and green chillies and saute it till it becomes transparent.
- Then add the ginger garlic paste and saute it till the raw smell goes off.
- Add curry leaves, coriander leaves and pudhina and stir for a while.
- Now add the chopped tomatoes and give a good mix.
- Add all the spices, turmeric powder, chilli powder, coriander powder,garam masala, salt and mix well.
- Pour the eggs and scramble it till almost cooked.
- Once it is coated well with the masala, add the parotta pieces and give a good mix.
- Make sure that the parottas are not sticky to one another.
- Switch off the flame and garnish with coriander leaves.
- Serve.
