This chicken curry is very simple and easy to make. There are so many variations in preparing chicken curry and this is my mom's own way of cooking it. Coconut based curries bring out a unique flavor and taste, so that this chicken curry also includes it.
Ingredients :
Chicken - 1 kg
Coconut - 1 cup
Turmeric powder - 1tsp
Coriander powder - 1 tblsp
Pepper powder - 1 tblsp
Red chilli powder - 2 tblsp
Fennel powder - 1tblsp
Ginger garlic paste - 2 tblsp
Shallots - 10 nos
Mustard seeds - 1 tblsp
Curry leaves - 1 spring
Coconut milk - 1/2 cup
Salt - to taste
Coconut oil - 2 tblsp
Method :
- In a kadai, take all spice powders, red chilli powder, coriander powder, fennel powder, turmeric powder, pepper powder ad roast it for 1 minute and keep aside.
- In the same kadai, add fresh coconut and roast till light golden brown color and keep it aside to cool down.
- Take coconut in blender and make it into a fine paste by adding water.
- Take chicken and add turmeric powder, ginger garlic paste and mix well.
- Pour water into chicken and allow it to cook.
- When the chicken is half done, add salt to taste and cover & cook.
- Open the lid and once the chicken is cooked well, add all the fried spice powders and mix well.
- Then add the grounded coconut mixture into chicken stir well.
- In a pan, pour coconut oil and saute mustard seeds, curry leaves, shallots and fry till golden.
- Now add this to chicken and mix well.
- Allow it to cook and at last add coconut milk (optional).
- Taste the chicken curry and check if salt is needed.
- Serve with rice, roti or chapathi.

Take spice powders in a kadai
Roast them and keep aside
Take coconut in the same kadai
Roast till golden and blend into fine paste

Add salt to taste
Add all roasted spice powders
Mix well
Add grounded coconut mixture
Mix well
Saute mustard seeds, curry leaves and shallots
Add it to the chicken
Add coconut milk
